Balila (gluten free)

Serves 4

INGREDIENTS

1 cup dried chickpeas
Extra virgin olive oil 4 tablespoons
4 cloves of garlic
2 lemons juiced
Salt to taste

METHOD

  1. Soak chickpeas in water overnight. Rinse them well and drain.
  2. Add chickpeas to a pot of water making sure chickpeas are fully covered with water.
  3. Bring to the boil and let it boil on low heat stirring occasionally until chickpeas are soft (approx. 1 hour).
  4. Drain chickpeas and add to bowl.
  5. Add olive oil, lemon juice, salt and mix.
  6. Serve and garnish with fresh mint or parsley.

Try serving with with Lebanese bread, Lebanese cucumbers, radish, fresh mint, fresh parsley, red onion and tomatoes.
