Serves 4
INGREDIENTS
1 cup dried chickpeas
Extra virgin olive oil 4 tablespoons
4 cloves of garlic
2 lemons juiced
Salt to taste
METHOD
- Soak chickpeas in water overnight. Rinse them well and drain.
- Add chickpeas to a pot of water making sure chickpeas are fully covered with water.
- Bring to the boil and let it boil on low heat stirring occasionally until chickpeas are soft (approx. 1 hour).
- Drain chickpeas and add to bowl.
- Add olive oil, lemon juice, salt and mix.
- Serve and garnish with fresh mint or parsley.
Try serving with with Lebanese bread, Lebanese cucumbers, radish, fresh mint, fresh parsley, red onion and tomatoes.
